Pomegranate Molasses
Pomegranate molasses is indeed one curious ingredient. It’s a condiment that is really just a concentrated form of pomegranate juice, and it’s been used in many cuisines for centuries. It has no relationship to molasses as you know it, except that it has a similar consistency. it can be used in everything from meat glazes to salad dressings to desserts.
It’s truly a wonder condiment because it intensifies the flavor of so many foods without adding fat or salt, which is made by reducing pure pomegranate juice.
Evaporating the water until the naturally occurring sugars within the juice thicken and concentrate the syrup.
In our industry we cut the pomegranates in half width ways, then use a lemon juicer to squeeze out the juice, we place the juice, sugar and lemon juice in a stainless steel pot, bring to a gentle boil, until the sugar has dissolved, then reduce the heat so that the liquid is gently simmering.
In the end, good food keeps you in a good mood.

Orange Blossom & Rose Water
Orange Blossom Water, You may think that this beneficial water comes from the pretty flowers of the orange tree, but that’s not the case. Orange blossom water is a by-product of the process of distillation that is used to obtain the essential oil from the seeds, peel, leaves, bark, and pulp.
Rose water is water that is scented and flavored with rose petals. It’s used in food and drink recipes, as a facial toner, to scent baths, and as a perfume. High quality rose water is distilled to capture only the volatile compounds responsible for a rose’s fragrance and flavor — its essence.
Distillation is simple. We heat rose petals to release their volatile compounds and then collect and keep only this portion.
The goal is to heat the flower petals and collect the steam that evaporates. When the steam cools, it condenses into the liquid, forming the rose water.
